Kristjan Peäske, our Food and Beverage Manager, recently returned from a month in London at the five-star Berkeley Hotel in Hyde Park. (The Berkeley has two Gordon Ramsay restaurants, as well as the Blue Bar, known as one of Madonna’s favorites.) Kristjan’s visit, organized as a traineeship, allowed him to take part in every aspect of the hotel’s food and beverage business with an eye toward bringing the best of what he saw back to Estonia.

The name \"Bagnaia\" is itself a reflection the properties of the area\'s water. In Medieval times the Sienese erected spa centers the fame of which spread beyond the province and attracted Popes, Cardinals and Princes such as Lorenzo il Magnifico. With the passing of time, the spa tradition was gradually lost, in favor of other destinations, and the health inducing properties of the waters of Santa Caterina were left to the farm workers (and their animals).
